Air Fryer Potato Skins
Crispy on the outside and loaded with cheesy goodness on the inside, these air fryer potato skins make a perfect appetizer or snack.

Ingredients
- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 4 strips cooked bacon, crumbled
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
Instructions
- Prepare Potatoes: Wash the potatoes and pierce them with a fork. Microwave on high for 5-7 minutes until slightly tender.
- Scoop and Season: Cut the potatoes in half and scoop out most of the flesh, leaving about 1/4 inch of potato on the skin. Brush with olive oil and season with salt and pepper.
- Air Fry: Preheat the air fryer to 400°F. Place the potato skins in the basket, cut side up, and cook for 10 minutes until crisp.
- Add Toppings: Sprinkle cheese and bacon evenly over each potato skin. Return to the air fryer for an additional 5 minutes until the cheese is melted.
- Garnish and Serve: Remove from the air fryer and top with sour cream and green onions. Serve immediately.
Tips
- Use a spoon to carefully scoop out the potato flesh to avoid tearing the skins.
- For extra crispy skins, lightly spray them with cooking oil before air frying.
- Adjust the cheese and bacon to taste for a more or less indulgent snack.
