Ingredients
- 4 medium bell peppers, halved and seeded
- 1 cup cooked quinoa
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro
Instructions
- Prepare the Peppers: Preheat the air fryer to 360°F. Cut the bell peppers in half and remove seeds and membranes.
- Mix the Filling: In a bowl, combine quinoa, black beans, corn, tomatoes, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Stuff the Peppers: Spoon the quinoa mixture into each pepper half, pressing down gently to pack the filling.
- Air Fry: Place the stuffed peppers in the air fryer basket. Cook for 10 minutes at 360°F.
- Add Cheese: Open the air fryer and sprinkle cheese on top of each pepper. Cook for an additional 5 minutes until cheese is melted.
- Garnish and Serve: Remove from the air fryer and sprinkle with fresh cilantro before serving.
