These air fryer breakfast burritos are filled with scrambled eggs, cheese, and your favorite fillings, then crisped in the air fryer for an easy make-ahead breakfast.

Ingredients
- 4 large flour tortillas
- 6 large eggs
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/2 cup cooked breakfast sausage or bacon (optional)
- 1/2 cup diced bell peppers or onions (optional)
- Salt and pepper to taste
- Cooking spray or a little oil for brushing tortillas
Instructions
- Cook the filling: Scramble eggs in a skillet until just set. Stir in cheese, cooked sausage or bacon, and vegetables if using. Season with salt and pepper.
- Assemble burritos: Divide filling among tortillas. Roll each burrito tightly, folding in sides as you go.
- Prepare for air fryer: Lightly spray or brush the outside of each burrito with oil.
- Air fry: Preheat air fryer to 375°F (190°C). Place burritos seam-side down in the basket and cook for 6–10 minutes, turning once, until golden and crisp.
- Serve: Serve immediately with salsa, sour cream, or hot sauce.
Tips
- Freeze unbaked burritos for up to 2 months; thaw overnight and air fry to reheat.
- Don’t overfill burritos to keep them from bursting open in the air fryer.
- Customize with black beans, spinach, or hash browns for extra flavor and texture.
